Potato and Lamb Fritters
| 8 oz. lean cooked lamb, minced |
1 tsp. fresh thyme |
| 1 onion, finely chopped |
1 lb. mashed potatoes |
| 2 pieces crispy fried bacon, crumbled |
2 Tbs. flour |
| 1 clove garlic, crushed |
cooking oil |
| salt and pepper |

Combine the potatoes, lamb, onion, bacon, garlic, thyme and
egg. Season to taste. Shape into flat cakes with the flour and cook
in the oil until golden brown.
