Teisen Nionod -- Welsh Onion Cake This is an old Welsh recipe for a potato and onion dish that is baked like a cake in a slow cooking oven. Serves eight.
Preheat oven to 300°. Dry the potato slices in a towel to remove excess moisture. Grease a loaf tin or a cake tin and place potatoes and onions in layers, beginning and ending with a layer of potatoes. Dot each layer with a little butter (also top layer of potatoes) and season each layer with a little pepper and salt. Cover with aluminum foil and bake for 1 1/2 hours. Remove the cover the last 1/2 hour for the cake to brown. Turn onto an ovenproof dish and place under grill (broiler) for a couple of minutes before serving.
