Teisenneau Pysgod -- Fish Cakes                        

Easy, simple and good!

1 lb. cooked white fish
1 oz. breadcrumbs
1 oz. butter
1 Tbls. chopped parsley
2 Tbls. milk
 
COATING
4 oz. breadcrumbs
Fat for frying

Flake the fish, taking care to remove all bones.

Mix fish with the breadcrumbs, butter and parsley.

Bind together with the milk.

Form into cakes and coat with breadcrumbs.

Fry in a little fat until crisp and golden.
