Eog Wedi – Baked Salmon

4 lb. whole salmon salt & pepper
4 oz. butter a few cloves
pinch of rosemary 1 tsp. vinegar
nutmeg 1 tsp. lemon juice

Mix seasonings.  Prepare salmon by cleaning and then rubbing inside and out with the mixed seasonings.

Put salmon in a greased oven-proof dish and cover with dots of butter.

Roast in a moderate oven, 350°, for 20 minutes per pound.

Baste frequently.

Serve with wedges of lemon.
