Salmon in Pastry

6 oz. cooked, fresh salmon 1/2 pint milk
8 oz. puff pastry salt and pepper
1/2 oz. flour 1 beaten egg
1/2 oz. butter 2 leeks cleaned, chopped and cooked

Melt the butter in a sauce pan and stir in the flour.  Cook for one minute and gradually blend in the milk.  Cook to a thick sauce and season with the salt and pepper.

Roll out the pastry and cut into squares.  Lay a piece of salmon in the center of each square.  Cover with well drained leeks and the sauce.  Lay another square over the leeks and seal the edges.

Glaze with the egg and bake at 400º for 30 minutes.
