Welsh Funeral Cake                        

This is a very old recipe for a rich fruit cake, traditionally served to friends and relatives after a funeral in Wales.

1 cup plus 2 Tbls. dark brown sugar
8 oz. butter or margarine
1/2 cup ground almonds
3 eggs
3 1/2 cups plain or all-purpose flour
1 cup sultanas or golden raisins (lightly rolled in flour)
1 cup currants (lightly rolled in flour)
1/2 cup candied fruit (if desired)
nutmeg
allspice

Put the sugar and butter in a saucepan with a tablespoon of water and boil for 3 minutes.

Remove the saucepan from the heat and allow the contents to cool.   Stir in the ground almonds, eggs, flour, sultanas, currants, candied fruit and a pinch of nutmeg and allspice.

Pour the cake mixture in a 10 inch greased, deep cake pan and bake in a heated oven of 375° and cook for an additional 30 minutes.  Remove the cake from the oven and turn it out onto a cake rack to cool.  Store in an airtight container. 

Serve sliced, along with a good hot cup of tea.
